Seeni Sambal
Ingredients
- 5 large red onions thinly sliced
- 1 tablespoon red chili flakes
- 1 teaspoon of chili powder
- ½ cup tamarind juice
- 1½ teaspoon of small Maldive fish pieces
- A spring of curry leaves
- 2 crashed cardamom
- 2 small cinnamon pieces
- 2 small pandan leaf pieces
- 2 cloves
- Salt as required
- 2 tablespoon sugar
- 5 tablespoons oil
Instructions
- Take a cooking pot and add oil
- When the oil heats up, add curry leaves, cardamom, cinnamon, cloves, pandan pieces and fry it slightly
- Now add the onion, salt as required, chili powder
- Stir and cover it well & cook over low heat for 10 minutes
- When all the water from the onions slice evaporates slices become a bit translucent and start to brown
- Now add tamarind juice & sugar, Maldive pieces
- Cook while stirring on high heat about 3-5 minutes without covering
- Now add chili flakes
- Stir well and cook 20 sec
- Left from cooker
- Serve with bread or milk rice or string hoppers & dhal curry
