Sri Lankan Seeni Sambal

 Seeni Sambal

 

Ingredients

  1. 5 large red onions thinly sliced
  2. 1 tablespoon red chili flakes
  3. 1 teaspoon of chili powder
  4. ½ cup tamarind juice
  5.   teaspoon of small Maldive fish pieces
  6. A spring of curry leaves
  7. 2 crashed cardamom
  8. 2 small cinnamon pieces
  9. 2 small pandan leaf pieces
  10. 2 cloves
  11. Salt as required
  12. 2  tablespoon sugar
  13. 5 tablespoons oil

Instructions

  1. Take a cooking pot and add oil
  2. When the oil heats up, add  curry leaves, cardamom, cinnamon, cloves, pandan pieces and fry it slightly
  3. Now add the onion, salt as required, chili powder
  4. Stir and cover it well & cook over low heat for 10 minutes
  5. When all the water from the onions slice  evaporates slices become a bit translucent and start to brown
  6. Now add tamarind juice & sugar, Maldive pieces
  7. Cook while stirring on high heat about 3-5 minutes without covering
  8. Now add chili flakes
  9. Stir well and cook 20 sec
  10. Left from cooker
  11. Serve with bread or milk rice or string hoppers & dhal curry
